     Racy Raisin Rice Pudding

Ingredients
2 to 3 cups soy milk
2 cups cooked rice
1 1/2 teaspoons cinnamon
1 Tablespoon vanilla extract
1 cup raisins
1/2 cup slivered almonds
1/4 cup sweetener
 

Instructions
In a medium saucepan, add the milk, cooked rice, cinnamon, vanilla, raisins, almonds, and sweetener and bring to a boil. Reduce heat and simmer on low heat for 15-20 minutes until pudding thickens to desired consistency, stirring occasionally. Serve hot or cold with soy milk or cream.
