Instructions
Bring veggie broth and pre-soaked barley to a boil. Add carrots, sweet potato, russet potato, onion, garlic, seitan and tomato. Cover, and simmer over low heat until barley is tender (it will be chewy, but not hard). This should take about 30-40 minutes. Add remaining ingredients and heat until warmed throughout.
