Mash or puree the kidney beans (with a little water, if necessary) to a coarse paste.
Add shallot, hazelnuts, ginger, cayenne pepper, soy sauce, bread crumbs, flour, salt and pepper; mix well.Season and shape into 4 flat burgers; brush with oil and grill over hot embers. Alternately, fry the burgers in hot oil. Serve on a toasted bun with all the usual burger trimmings. Makes 4 burgers.
