to make the pate-
break up the levure et add a wee bit of tepid water. leave it for 5 mins and then mix into water. add the salt and flour and add the water bit by bit. once reached the consistency where you get a ball . Add the unknown quantity of olive oil qnd work it into the ball. set aside in a warm place till it doubles/triples in size. knock it back and repeat if you have time.
