     Mushroom soup

Ingredients
50g/2oz of butter
225g/8oz of mushrooms finely chopped [I use food processor]
50g/2oz of flour = 6 level tablespoons
1 pint of chicken stock [stock cubes equally as good]
3/4pint of milk
salt and pepper
 

Instructions
Melt the butter in a pot. Add the mushrooms and fry, stirring for 5 mins. Add the flour and stir in well. Cook for a further 2mins making sure it does not stick to the pot. Gradually stir in the stock and milk and bring to the boil, stirring. Simmer until thickened. Add salt and pepper to taste. If the soup is looking too thick just add more water.
This freezes well----defrost before re-heating or heat very gently on top of cooker.
