Melt the butter in a pot. Add the mushrooms and fry, stirring for 5 mins. Add the flour and stir in well. Cook for a further 2mins making sure it does not stick to the pot. Gradually stir in the stock and milk and bring to the boil, stirring. Simmer until thickened. Add salt and pepper to taste. If the soup is looking too thick just add more water.
