     Spring veg and bean soup

Ingredients
2 carrots
2 sticks celery
2 med onions
2-3 garlic
olive oil
1 x tin cannellini beans
200g cauliflower
200g broccoli
200g spinach
 
2 large ripe tomatoes
2 x chick or veg stock cubes
salt and pepper

Instructions
roughly slice carrots, slice celery, roughly chop onions, chop garlic. add oil to pan. add all sliced and chopped ingredients to pan and mix. cook for around 12 mins with lid askew until carrots have softened but are still holding shape and onion is lightly golden. drain your beans. break up cauli and broc into small florets. roughly chop spinach. quarter toms removing stalks. put stock cubes into jug/pan and add 1.8 litres of boiling water. once dissolved then add to pan. add beans, cauli, broc and toms. give soup a good stir and bring to boil. reduce heat and simmer for 10 mins with lid on.
to serve soup... add spinsch to pan and cook for further 30 seconds then remove pan from heat.... blend half of soup so it keeps some chunkiness... season to taste..
