     Quinoa Porridge with Apple Compote

Ingredients
½ c. quinoa
½ c. apple juice
½ c. orange juice
1 sweet apple (such as Gala or Fuji)
¼ c. blueberries
 

Instructions
In a saucepan, slowly cook the quinoa (10-12 minutes) with the juices, stirring occasionally.
Meanwhile, steam the apple.
Peel the apple and blend it in a food processor. Add blueberries and puree lightly.
When quinoa is ready, top with the fruit compote, and serve.
