Beat egg yolks with sugar until fluffy. Blend in cheese and rum. Beat egg yolks until stiff. Fold into cheese mixture. Whip cream and fold into mixture.

Dip lady fingers into espresso (lightly, do not soak). Place layer of lady fingers in pan. Spread cheese mixture over lady fingers. Add another layer of lady fingers and spread with remaining cheese mixture.

|
Place in refrigerator over night.
|
|
|
Just before serving, sprinkle with powdered cocoa.
