     Totally Tiramisu

Ingredients
1 (8 oz) cup espresso coffee
3 1/2 tbsp dark rum
26 italian ladyfingers
12 oz. mascarpone cheese
3/4 cup confectioners sugar
1 pint heavy cream
1/2 tsp vanilla extract
3 tbsp dark cocoa for garnish
 

Instructions
Prepare the espresso, add 1 1/2 tbsp of rum and set aside to cool in a glass pie pan. Quickly dip 13 ladyfingers in the mixture on both sides and place them on the bottom of a 2 qt (8x8x2 in) glass baking dish. Reserve remaining espresso and lady fingers.
In a large mixing bowl, place mascarpone, confectioners sugar, cream remaining rum and vanilla. Beat, using a hand held electric beater until the surface ripples and the mixture is fairly stiff. Spoon half of this mixture over the espresso dipped lady fingers and smooth the surface with a rubber spatula. Dip the remaining ladyfingers in the rest of the espresso mixture and repeat, making another layer.
Top this with the remaining cream mixture, then cover with plastic wrap and chill for a minimum of 4 hours and up to 8 hours if necessary.
When ready to serve, cut into equal squares. Place the squares on serving plates and sift the cocoa over the surface, allowing some to dust the plate. Serve chilled.
