Preheat oven to 350. Brown hamburger and onion,
add salt and pepper, drain and add the garlic.
Then add the cumin, cayenne pepper, paprika, mix throughly. Add taco seasoning and water. Simmer
for 5 minutes and then add the diced tomatoes.
Simmer for about 10 minutes then add a couple of
tablespoons of the enchilada sauce and stir.
Warm tortillas in oven just until warmed through.
Add hamburger mixture, about 3 good scoops with
large dinner spoon. Roll up tortilla and place in
9x13 greased baking dish. Finish adding hamburger
to remaining tortillas and place in pan.
Pour remaining can of enchilada sauce over top of
enchiladas, and sprinkle with mozzarella cheese.
Bake for 20 minutes, until heated through and top is
golden brown and bubbly.
