Preheat oven to 375 and grease 9x13 pan. Boil
macaroni, drain, and briefly rinse in cold water.
Melt butter in medium saucepan. When melted and
starting to foam, add flour and mix well. Slowly
add cold milk, slowly stirring until well mixed
and smooth.

Add velveeta, cheddar, and 1 cup Parmesan cheese
to mixture, stirring constantly until all the
cheese melts. Add more cheese if it looks too
thin. Add salt, pepper, and paprika and mix well.
Add cheese mixture to macaroni noodles, making
sure all noodles get well coated. Place in baking
dish, sprinkle with remaining Parmesan cheese and
bake about 3o minutes until golden brown.
