     SWEET POTATOES w/Kale

Ingredients
2 pounds mixed mushrooms (portabello, shitake)
3 garlic cloves (thinly sliced)
5 tablespoons olive oil
Salt and pepper
5 medium sweet potatoes, peeled and sliced 1 inch thick
½ cup chicken stock
½ cup whole milk of half and half
1 teaspoon smoked paprika
1 ½ cups extra sharp yellow cheddar cheese
 
1 pound Kale or cavelo nero (coarsely chopped)
Nutmeg

Instructions
Preheat oven to 450 Roast Sweet potatoes in oven for about 45 minutes Add milk/half and half to mash potatoes. Add stock to potato mixture Mash all together Season with salt & paprika Stir in cheddar until melted (OPTIONAL)
On a large baking sheet, dress the mushrooms and garlic with 1/4 cup EVOO and spread out. Roast the mushrooms for 20 minutes Remove from oven and season with salt and pepper
In another bowl, toss Kale with remaining 1 tbs EVOO Season with salt and pepper Arrange on a rack set over a baking sheet and roast until crisp at the edges. 10 to 12 minutes
Combine the mushrooms and garlic with the Kale Serve on bed of sweet potatoes
