1 cucumber quartered (peel if skin is thick and tough)
½ red onion, chopped or diced
1 green pepper, chopped or diced
1 cup celery, chopped or diced
1 cup mayonnaise
½ cup sour cream
1 teaspoon dry ground mustard
½ teaspoon season salt or salt
½ teaspoon black pepper
½ teaspoon garlic powder
Instructions
peel (or not) potatoes, cut into cubes, cook and cool
(I dump potatoes into colander and rinse pan and fill with cold water then
Rinse potatoes then dump into cold water, allow to stand for 3 to 5 minutes
till slightly warm then dump into colander and let stand 10 minutes to drain well)
Pour vinegar onto potatoes and allow to stand 20 to 30 minutes (I do this and then cut up veggies)
Add to potatoes-
cucumber
onion
green pepper
celery
In small bowl combine,
mayonnaise
sour cream
dry ground mustard
season salt or salt
black pepper
garlic powder
mix well then toss with potatoes and veggies
Serving
Suggestions
Chill for two hours before serving.
