     Egg in the Hole

Ingredients
2 slices whole-wheat sandwich bread
2 tsp olive oil
2 large eggs
coarse salt and ground pepper
 

Instructions
Cut a hole in both bread slices. Heat oil in a large non-stick skillet over medium heat. Add the bread slices, side by side.
Carefully crack an egg into each bread hole (some white will remain on top). Season with salt and pepper.
Cook until the eggs begin to set, 2 to 3 minutes; gently flip the egg and bread with a spatula. Continue cooking until eggs are set, 2 to 3 minutes more. Sprinkle with salt and pepper. Serve immediately.
Per serving- 364 calories, 21.3 grams fat, 18 grams protein, 26/6 grams carbohydrates, 3.0 grams fiber.
