     Turkey Chili

Ingredients
2 tablespoons of olive oil
2 cups chopped onion
2 garlic cloves, finely chopped
1 red bell pepper, chopped
2 tablespoons chili powder
1/4 teaspoon cayenne pepper
1 tablespoon cumin
1 tablespoon oregano
1/2 teaspoon cinnamon
 
3 cans beans (16 oz each) Kidney, black and pinto
1 cup frozen corn, thawed
1 can (28 oz) crushed tomatoes with juice
1 cup low sodium tomato juice
Salt and pepper to taste
1 pound lean ground turkey
Optional garnish- Hot sauce; low fat shredded cheese or low fat sour cream

Instructions
Heat oil in a large deep pot over medium heat. Stir in ground turkey and cook until very little pink is visible. Add onion, garlic and bell pepper. Sautee until onion is translucent. Stir in chili powder, cayenne, cumin, oregano and cinnamon. Cook, stirring for 30 seconds. Stir in beans, corn, tomatoes and juice.
Reduce heat to medium-low and simmer gently 45 minutes, stirring occasionally. Season with salt and pepper to taste.
