Heat oven to 400 degrees. In a medium bowl, combine Brussel sprouts, oil, and salt and pepper to taste. Transfer brussel sprouts to parchment lined baking pan and roast until fork-tender and browned. About 25-30 minutes.
Transfer Brussel sprouts to a serving dish and drizzle with lemon juice, then sprinkle with lemon zest, parsley, capers, and additional salt and pepper, if desired.
Serve hot
