     Turkey & Spinach Manicotti

Ingredients
8 manicotti pasta shells
1/2 lb lean ground turkey
1 medium onion chopped (1/2 cup)
2 teaspoons of finely chopped garlic
1 cup of fat free ricotta cheese
1 teaspoon Italian seasoning
1 box of frozen cut spinach
1 1/2 cup organic pasta sauce or marinara sauce
2 tablespoons of parmesan cheese
 

Instructions
Heat oven to 375F and spray 11x7 glass baking dish with olive oil.
Cook manicotti as directed on the box, omitting salt. Rinse with cool water and drain.
Cook turkey, onion, and garlic over medium heat, until turkey is no longer pink. Remove from heat. Stir in ricotta cheese, Italian seasoning, and spinach.
Spoon turkey mixture into shells, arrange in baking dish, spoon sauce over shells, and bake 20-25 minutes. Sprinkle with Parmesan cheese.
