1/2 stick butter
|

1 onion, diced
|

2 carrots, diced
|

2 tbsp flour
|

8 russet potatoes, peeled and cubed

5 cups milk
|

2-3 cans corn (1 whole kernel, 1 cream corn)

1 tsp salt
|
|
1/4 tsp pepper
|
|

shredded cheddar
|
|
bacon bits
|

Instructions |

|
In large sauce pan melt the butter and saute the onion and carts until both are slightly tender, about 5 min. Whisk in the flour and cook for 1 min.

Add the potatoes and milk. Cook over medium heat for 15 minutes, until the potatoes are soft and some of them have started to break up.

|
Add corn and heat thoroughly.
|
|
|
Add cheddar and bacon bits just before serving.
