     Sweet Potato Biscuits

Category   Breakfast - Brunch
Sub Category   None

Ingredients
2 Cups Self-Rising Flour
3 Tablespoons Brown Sugar
1/4 Teaspoon Ground Cinnamon
1/8 Teaspoon Allspice
1/8 Teaspoon Ground Nutmeg
1/4 Cup Butter
3 Tablespoons Shortening
1 Cup Mashed Sweet Potatoes
6 Tablespoons Milk

2 TableSpoons Melted Butter

Instructions
Combine first 5 ingredients in a bowl. Cut in 1/4 cup butter and shortening with forks until mixture is crumbly. Add mashed sweet potatoes and milk, stirring just until dry ingredients are moistened.
Turn dough out onto a floured surface and knead a few times. Roll dough out to 1/2 inch thickness; cut with knife or biscuit cutter to desired shape.
Place biscuits on an ungreased baking sheet and brush with the melted butter. Bake at 400 degrees for 12 minutes or until brown.
Store bought Sweet Potato Butter or whipped butter are great toppings for these biscuits. Or any jam, jelly or honey you prefer. These biscuits are great with a cup of coffee. I cook the sweet potatoes in the microwave when they are whole until they are soft. I do not use canned sweet potatoes. Let them cool before mixing with the other ingredients.
