1 medium onion

2 tsp olive or canola oil

2 cups cubed fully cooked ham

2 cups sliced mushrooms
|

1 cup chicken broth
|

1/2 cup water
|

1/4 tsp pepper
|

1 1/2 cups instant rice
|

2 green onions, sliced

Instructions |
|
|
In a nonstick skillet, saute onion in oil until tender.
|

|
Add the ham, mushrooms, brother, water and pepper. Bring to a boil.
|
|
|
Add the rice. Reduce heat, cover and simmer for 5 minutes or until rice is tender. Gently fluff the rice.
|
|
|
Add green onions and Parmesan cheese.
