Preheat oven to 350. In a medium bowl, combine egg, 2 tsp Parmesan, salt, pepper and parsley; beat with fork. Put bread crumbs in a separate bowl.
In a skillet, heat a little oil. Dip scallopini into egg mixture, then into bread crumbs. Cook in skillet for about 2 minutes per side. Drain on paper towel.
In 9x13-inch dish, spread 1 1/2 cups spaghetti sauce on the bottom; layer next with veal; top with mozzarella slices. Cover with remaining sauce. Sprinkle with 1/2 cups Parmesan cheese.
Bake for 30-40 minutes.
