Combine sugar, coconut, potatoes, vanilla and salt and mix well. Line a 9 in square pan with foil. Spread mixture into pan, cover and refrigerate overnight. Cut into 2in x 1in rectangular pieces. Cover and freeze. Melt candy coating. Dip bars and place on a waxed paper to harden. Store in an airtight container
