     Cheese and Sausage Stuffed Zucchini

Ingredients
12 oz pork sausage
1 large zucchini
3 eggs, beaten
1 c. shredded colby cheese
2 c. cottage or ricotta cheese
1 1/2 c. italian blend cheese
1/2 c. chopped onion
2 T. italian seasonings
1/2 t. salt
 
1/2 t. black pepper
1 pinch garlic salt
sliced tomatoes, or chopped tomatoes (fresh or canned)

Instructions
Preheat oven to 350. Spray or butter a baking dish. Cook sausage, cumbling. DRain and set aside.
Cut ends off zucchini before cooking. Partially cook the zucchini in the microwave on high for 5 minutes. Remove from microwave and let sit for 10 minutes.
Meanwhile in a medium bowl combine eggs, colby cheese, cottage cheese, italian cheese, onion, italian seasoning, salt and pepper.
Slice zucchini in half lengthwise. Remove seeds and rinse.Place both halves in baking dish and sprinkle wth garlic salt. Layer sausage, tomatoes and cheese mixture. Bake in preheated oven for 40 min. Then broil for 5 min to brown the cheese.
