Mix the first 5 ingredients in a medium bowl. Beat the eggs in a separate bowl then mix into the vegetables and muffin mix. Add in sour cream and 3/4 c of grated cheddar cheese.
Lightly grease a 9x13 baking dish and then pour in corn mixture.
Bake at 350 degrees for 45 minutes. Remove from oven and top with remaining 1/4 cup of cheese. Return to oven and bake for 5-10 minutes or until cheese melts.
