     Carrot Cake

Ingredients
3 cups flour
2 1/2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 cup oil
2 cups sugar
3 eggs
1 (8 oz) can crushed pineapple with juice
2 cups grated carrots
 
1 1/3 cups flaked coconut
1/2 cup chopped nuts

Instructions
Mix flour, soda, cinnamon and salt in a mixing bowl. In seperate bowl, beat oil, sugar and eggs thoroughly. Add flour mixture. Beat until smooth. Add pineapple, carrots, coconut, and nuts.
Pour into greased 13X9 inch pan. Bake at 350 degrees for 50 to 60 minutes.
Frost with cream cheese frosting.
