1/2 lg. TART GREEN APPLE - peeled, cored, diced small
2 Tbl. real BUTTER - divided
1 1/2 Tbl. BROWN SUGAR - divided
1/8 teas. GROUND SAGE
coarse BLACK PEPPER to taste
SALT to taste
(optional Ground Cinnamon)
Instructions
Preheat oven to 325. Cut squash in half lengthwise, and remove seeds and strings. Place cut sides down in baking dish and add 1/4 inch water. Bake uncovered 45 minutes.
Meanwhile, scramble sausage until no longer pink. Do not drain. Add sage, apple, 1 Tbl. of the butter, and 1 1/2 teas. of the brown sugar. Sprinkle with pepper and salt. Cook, stirring, until apples lightly browned.
Drain water from squash and turn cut side up. Place 1/2 of sausage mix into each squash half. Dot with remaining tbl. butter (cut small) and remaining tbl. brown sugar. Bake uncovered an additional 20-25 min. Let cool several minutes.
As you eat, try sprinkling some lightly with ground cinnamon. If you prefer it this way, then next time sprinkle lightly on sausage mix just before stuffing.

Suggestions
Serve with boiled Pearl Onions (buttered, salted, peppered) or with boiled small whole onions.
