     Mac-N-Cheese with Squash

Ingredients
1- 1 1/2 pounds macoroni with ridges (bubettini/penne)
1 tablesppon EVOO
2 tablespoons butter
2 tablespoons chopped fresh thyme (dried works OK)
1/2 medium onion
3 tablespoons flour
2 cups chicken stock or broth
10 ounces frozen butternut squash (canned pumpkin also works well)
1 cup half and half
 
2 cups grated sharp Cheddar cheese
1/2 cup grated Parmigiano-Reggiano cheese
1/4 teaspoon nutmeg
Freshly groud black pepper to taste

Instructions
Heat a pot of water to boil for the pasta. Salt the water, tehn add pasta and cook al dente.
While pasta cooks, heat a large heavy bottomed pot over medium heat. Add EVOO and butter. When butter melts into oil add thyme and grate onion directly into the pot. Cook the grated onions for 1-2 minutes, then add flour and cook together for 1-2 minutes. Whisk in the stock, then add the squash and cook until warmed through and smooth. Stir in the cream and bring sauce to a bubble. Stir in the cheeses and season with salt, nutmeg and pepper to taste.
Drain the pasta well and combine with the sauce.
