     Beef - Mexican Cornbread Casserole

Ingredients
1 lb ground beef (or sweet sausage or ground chix)
1 onion
1 small jar of taco sauce-approx 8 oz for recipe
I usually buy a larger jar so I can serve some on the side
2 boxes Jiffy cornbread mix (.20 each)
Grated Cheddar Cheese
 

Instructions
Preheat oven to 350. Brown meat and onion. Drain off grease. Add taco sauce and simmer for 10 min.
Mix one box of cornbread. Can add a little more milk than called for to thin batter.Pour into 9x11 casserole dish and top with beef mixture. Sprinkle with cheese. Mix 2nd box of cornbread and pour over top.
Bake 25-30 min and sprinkle with more grated cheese. Bake an additional 10 min. or until toothpick comes out clean.
Serving Suggestions
I always serve with extra taco sauce on the side.
