     Kale Salad

Ingredients
1 bunch of green kale (Remove stems and cut leaves into pieces)
˝ head of red cabbage (Chop with knife)
˝ cup raw pine nuts (or pumpkin or sunflower seeds)
˝ cup dried cranberries
1 T. sesame oil
 

Instructions
Drizzle the oil over the Kale and work the oil into the Kale for 3 to 4 minutes until tender. Add the cabbage, nuts and cranberries.
Wisk together dressing- 3 T. sesame oil 3 T. real maple syrup or honey 3 T. sodium reduced soy sauce 3 T. apple cider or rice vinegar 1 T. freshly grated ginger root (3 T. raw cashew butter—optional) Pour dressing over vegetables and toss. Refrigerate overnight for better flavour.
