Preheat the oven to 220C/425F/Gas 7.

Heat the oil in a wok and when hot add the red onion and red pepper. Stir fry for one to two minutes or until softened.
3.
Spread out a large piece of baking parchment and place the stir fried vegetables onto the middle.
4.
Top with the trout fillet and place the lemon slices and chopped chilli on top. Pour over the soy sauce.
5.
Fold the parchment around the trout fillet and seal tightly.
6.
Lay on a baking sheet and cook in a hot oven (220C) for ten minutes.
