2 packages (8 oz) cream cheese, softened (soften cream cheese in microwave on high for 15-20 seconds
2/3 cup sugar
1 TBS lemon juice
1 teaspoon vanilla
2 eggs
1 Keebler Ready Graham Cracker Pie Crust-(extra serving size)
Strawberry Glaze
1 cup sugar
3 Tablespoons cornstarch
1/3 cup water
1 cup strawberries, mashed
Instructions
In large mixing bowl beat bream cheese on medium speed with electric mixer until fluffy. Add sugar, lemon juice and vanilla. Beat until combined. Add eggs, one at a time, mixing until just combined after each addition.
Place crust on a baking sheet. Pour in cream cheese mixture. Bake at 350 degrees for 25-30 minutes or until center is almost set. Cool on wire rack.
For the strawberry glaze- blend 1 cup sugar and 3 tablespoons cornstarch together in a small saucepan over medium heat. Stir in 1/3 cup water and 1 cup mashed strawberries. Cook, stirring constantly, until the mixture thickens and boils. Boil and stir for 1 minute. Cool thoroughly before spreading over cheesecake.
