Family size jar spaghetti sauce- or homemade if you prefer
1/2 lb crimini or your favorite mushrooms
1 jar or can artichoke hearts
2 cups frozen spinach- thawed and drained
Beschamel sauce- recipe follows
1 lb. lean ground turkey
1 lb turkey italian sausage
Mozzarella cheese
Parmesan cheese
1 teaspoon Garlic powder (optional)
Italian seasoning (optional)
1/2 teaspoon Salt (optional)
1 stick butter or margarine
1/2 cup flour
4 cups milk
Part skim ricotta cheese
1/4 teaspoon Nutmeg
Instructions
Preheat oven to 375. Begin by draining your spinach and chopping the artichoke hearts and mushrooms into tiny pieces and set aside. In a large bowl mix ground turkey and turkey italian sausage and begin to brown in a saute pan and set aside, next, in a large pot begin making the beschamel sauce, melt 1 stick butter or margarine and let start to bubble, next mix in flour, nutmeg, optional garlic powder,and optional salt, stir constantly until all lumps are gone and smooth- flour will take on a yellow color- about 2 minutes pour in 4 cups of milk, stir and let cook on med/low heat until thickened-about 10 minutes.
Once beschamel has thickened mix with pasta sauce and set aside.
Next, in an 8x8 or 9x13 square baking pan pour a thin layer of sauce on bottom of pan, add a layer of uncooked noodles, ricotta, meat, mozzarella, artichoke hearts, spinach, mushrooms, parmesan and more sauce. Repeat for 3 layers, or more if you prefer, finally on top of the last layer of noodles pour a thick layer of mozzarella, parmesan and optional italian seasoning.
Cover lasagna with foil and bake for 45 minutes, remove from oven, carefully remove foil and continue to bake uncovered for 15 more minutes or until cheese is golden brown on top. Remove from oven let rest for 15 minutes, serve and enjoy!! You may choose to omit the lean turkey portions for lean ground beef and regular italian sausage but remember, this is the lean version!! I enjoy both versions depending on how I am feeling!! And believe me, the kids will have no idea that this is healthy lasagna, I've served it to my 8 year old son and he loves it!!!
