|
start by preheating skillet on medium high with some of the oil and in another pan start cooking the ground beef as desired. slightly wet the tortillas in the oil so they are soft and set aside. preheat oven to 375

drain meat, then place a tortilla down and place 2 tablespoons full then roll. repeat this step with all tortillas leaving some meat for the topping if desired.

|
after all tortillas are rolled and placed in deep baking sheet top with diced onion, enchilada sauce or chili if you chose that, then sprinkle cheese and remaining meat on top.

|
place in oven for 15-20 minutes, remove when cheese is melted to your liking. let them cool about 5 minutes, then serve and enjoy
