     Apple and Dried Cranberry Crisp

Ingredients
Nonstick vegetable spray
1/2 Cup all-purpose flour, plus 2 Tbls, divided
3/4 Cup old-fashioned oats
1/2 Cup toasted wheat germ
1/3 Cup light brown sugar
1/3 Cup roughly chopped walnuts
2 tsps ground cinnamon
1/4 Cup (1/2 stick) butter, melted
5 large Fuji apples, washed, dried
 
2 Tbls lemon juice
1/3 Cup dried cranberries

Instructions
Adjust rack to middle position. Preheat oven to 375 F. Spray 9 x 13 baking dish with nonstick spray.
Prepare topping- In medium bowl, stir together 1/2 cup flour, oats, wheat germ, brown sugar, walnuts and cinnamon. Add butter and stir to combine. Set aside.
Prepare apple filling- Cut apples into lengthwise quarters. Cut away core. Cut each quarter into 4 lengthwise wedges; hold wedges together and cut crosswise in 1/4-inch slices, creating small triangular pieces of apple with a tiny strip of skin attached. Place apple pieces in bowl with cranberries. Add lemon juice and toss. Add 2 Tbls flour; toss to combine. Place in prepared dish in an even layer. Add topping in an even layer.
Bake 45 minutes in preheated oven or until topping is crisp and apples are tender. Serve warm. Accompany with ice cream or whipped topping, if desired.
