     BLUEBERRY STUFFED FRENCH TOAST

Ingredients
12 slices bread, cubed
1 (8 oz.) cream cheese
1 c. fresh blueberries
12 beaten eggs
1/3 c. maple syrup
2 c. milk
TOPPING
1 c. water
1 c. sugar
 
2 Tbsp. cornstarch
1 Tbsp.butter
1 c. blueberries

Instructions
Spray 9x12 glass casserole with pam, place half the bread cubes in casserole. Add cubed cream cheese and blueberries. Place remaining bread over berries. Combine eggs, maple syrup and milk; pour over bread mixture. Cover and refrigerate over night. Next morning cover with foil and bake for 30 minutes at 350º, remove foil and bake another 30 minutes.
Cook topping ingredients until thick. Pour over top of casserole.
Serving Suggestions
This is great for Christmas morning brunch.
