Arrange bread slices in a lightly greased 8x8 baking pan; set aside.
Stir together eggs, milk, mustard, and onion; pour over bread.
Sprinkle with bacon; cover and refrigerate 8 hours / overnight.
Let stand at room temperature for 30 minutes. Uncover and bake
at 350 for 20 minutes.
Sprinkle with cheese and bake an additional 5 minutes or until
cheese melts.
