1 ½ lb lean flank steak, round steak, or stew cubes
1 tomato, diced or about 1 cup of tomato juice
1/8 tsp garlic
2 tsp salt
2 tsp sugar
About 2 cups water or more
2 tbsp cornstarch
2 tbsp water
3 cups cooked rice
Instructions
Heat oil in heavy skillet. Saute onion over medium heat, just until tender. Stir in curry powder- cook 1 min.
Add beef cubes and next four ingredients- tomato, garlic salt and sugar. Continue cooking until beef cubes are lightly browned. Add enough water to cover beef. Cover skillet and simmer gently about 3 hrs or longer until beef is extremely tender.
Mix cornstarch and 2 tbsp water. Thicken curry with cornstarch mixture. Serve with Rice.
