To prepare dressing- in a medium bowl, whip cream until thickened but not stiff. Fold in ogurt, pineapple juice, rum and coconut cream. Yield- approx. 1 34 cups.
To assemble salad- arrange lettuce leaves on a large platter, Decorate with the desired fruits and sprinkle with cocunut and top with dressing.
