Ingredients
6 lbs fully cooked and shredded pork (butt/shoulder)
1 19oz can red enchilada sauce
1 20oz can/bottle Dr. Pepper soda
1 tsp salt
1/4 tsp garlic salt
2 cups packed brown sugar
1/2 cup fresh chopped cilantro
 

Instructions
Meat prep- wrap pork in foil put in roasting pan with 1 cup water and bake at 275 for 5 hours. Pull meat/ shred and let cool 20 min.
30 min before meat is done combine all other ingredients in a large cooking pot. Bring to a boil and let simmer. Add the meat to sauce and bring to boil.
Turn heat down and let simmer for 20 min. Meat needs this cooking time to absorb the flavor.
Serve! Makes enough for 8 burros, or 10 pork salads.
Serving Suggestions
Serve with Cilantro Rice, and Cilantro Ranch Dressing
