     Shoney's Country Fried Steak

Ingredients
2 cups flour
2 teaspoons salt
1/4 teaspoon pepper
Four 4-ounce cube steaks
2 cups vegetable oil, for frying
1 tablespoon vegetable oil
1 1/2 tablespoons lean ground beef
1/4 cup flour
1/4 teaspoon salt
 
1/4 teaspoon pepper
2 cups chicken broth
2 cups milk

Instructions
Do ahead- Combine the flour with the salt and pepper. Put some water in a shallow bowl. Dip the steaks in the water then the flour mixture. Line a plate or baking sheet with waxed paper and put each steak on the plate. Freeze the steaks for 3 hours.
Do ahead- Make the gravy in small saucepan. Heat the 1 tablespoon oil and saute the ground beef, breaking it up as it cooks. Whisk in the flour and stir until the paste is smooth. Season with salt and pepper, then add the chicken broth and milk. Bring to a boil, then lower the heat and simmer for 10 minutes. The sauce should be lightly thickened.
Heat 2 cups vegetable oil in a heavy skillet and bring the temperature up to 350F. Fry the frozen cube steaks one at a time until they are golden brown on each side, turning once. Drain and keep warm.
Plate the steaks and pour the warm gravy over each one.
