1 kilo flour, which is 7 or 8 c sifted, whole wheat or regular bread flour
1 3/4 c warm water
2 big T yeast
3/4 c sugar
1 egg
1/2 c oil
1 T salt
Instructions
In a large bowl, combine warm water and sugar. sprinkle yeast on top and let it proof.
add the egg, oil and salt and stir until combined.
add the flour slowly, mixing after each addition. the dough should be slightly sticky. knead until dough is smooth.
place in an oiled bowl and oil the top. cover with a towel and let it rise until it is doubled. punch it down and let it rise again. punch it down and shape into challahs. allow to rise some more, brush with egg and bake at 350 until golden on top and they sound hollow when tapped.

Suggestions
for the egg to brush on top, combine 1 whole egg, 1 yolk and some sugar.
