     Shrimp Cakes with Avocado Salsa

Ingredients
14 ounces raw/peeled/deveined shrimp
1 and 1/2 ounces shallots
2 ounces onion
1 and 1/4 ounces celery
2 tbsp cilantro
1 egg white
Juice of one lemon
1/2 tbsp toasted seasame oil
1/4 c panko bread crumbs
 
1 tsp pepper
olive oil for cooking
Salsa- 1 avocado, 1 tbsp cilantro, 2 and 1/2 ounce red onion, 1 clove garlic, 2 tbsp lime juice
Salsa (cont)- 1 tbsp pickled jalapeno, 1 tsp pepper
Amino Acids - will need 2 tsp total

Instructions
Shrimp Cakes- 1. In food processor, combine shrimp through seasame oil and process into small pieces but not smooth 2. Remove from processor and place in bowl. Add breadcrumbs, amino acids and pepper to taste. 3. Form into 3-ounce patties and place in saute pan with 2 tbsps of olive oil. Lightly brown on both sides.
Salsa- Cube avocado into small chunks and place in a bowl, then chop remaining ingredients into small pieces and mix with the lime juice, pepper, amino acids (1 tsp).
Serve shrimp cakes with avocado salsa
