     Potato Pancakes

2 1/2 cups of Shredded Potatoes rinsed
2 tbsp Chopped Onion
2 Eggs whipped
1 tsp Salt
1/2 cup Milk
1 1/2 tsp Baking Powder
3/4 cup Flour

Combine all ingredients together and fry in a pan with a small amount of oil covering the bottom of the pan.
Put about 1/4 cup to 1/2 cup of mixture in at a time (depending on how big you want the pancakes). Brown both sides until as crispy as you want them.
REHEAT- Preheat oven on 350 degrees and place in preheated oven for 15-20 minutes.
Serving Suggestions
Can be eaten plain, with salt, or with ketchup.
