     Buddy Stuffing

Ingredients
2 cups diced celery
2 cups diced yellow onion
2 cubes butter
2 tsp.dried sage (or 10 fresh sage leaves, finely chopped)
2 tsp. dried thyme
64 oz. chicken stock (may need more)
16 cups toasted bread cubes (sourdough, black, pumpernickel, etc.)
3 egg yolks, lightly beaten (makes stuffing richer)
3 cups chopped apples
 
1 cup golden raisins
1/2 cup dried cranberries
1/2 cup dried cherries
1/2 cup prunes, chopped
1 cup toasted pine nuts or chopped pecans
3 cups flat leaf parsley, chopped
Salt and pepper to taste

Instructions
Melt butter in large stock pot. Saute onion and celery until onion is translucent. Add sage and thyme and cook 3 minutes.
Add 1 cup of stock and stir. Cook 5 minutes, until stock is reduced by about half.
Remove from heat and stir in remaining ingredients. Spoon into bird or a buttered casserole dishes.
If baking in casserole dish, bake uncovered at 350 degrees about 30 minutes, until browned. If cooking in bird, follow instructions provided on the bird packaging.
