20 lb Turkey completely defrosted, giblets set aside
6 cloves of garlic thin sliced
1 lb brown sugar
2 C. Kosher salt course
1 gallon Apple Cider
4 C. hot water
6 large bay
2 Tbl black pepper
1 tsp red pepper
15 whole cloves
2 C. orange juice
2 Tbls crushed Rosemary
2Tbls Thyme
1 Tbls grated ginger
2 gallons cold water
Instructions
Defrost Turkey and set giblets aside
Add hot water and sugar and heat on medium until the sugar is dissolved.
Add spices, apple cider, ginger until hot.
Add salt and cool.
Once mixture is cooled, add cold water and orange juice.
Add garlic.
Place turkey in brine breast side down, make sure the cavity is filled, and the entire bird is covered.
Cover and set somewhere it is 40 degrees for 12 to 24 hours.
Pat dry and you are ready to roast!

Suggestions
After brining it is ready to roast. Use a roasting bag with a bed of vegetables(celery, onion, apples) cook at 350 for appropriate time.
