     Asparagus Flan

1 lb asparagus
4 Tbl butter
1 medium chopped onion
1/3 c parmesan
1 t tarragon
3/4 t salt
1/2 t pepper
3 eggs
1 1/2 cream
2 t fresh chives
2 t fresh tarragon
1 t lemon zest
1/2 t worchestershire
1/2 c olive oil
optional - 1/2 lb fresh crabmeat

Cut asparagus on diagonals. Cook with onion in butter for 20 mins then puree. Butter 6 ramekins. Add 3 eggs, cream, seasonings and cheese. Bakse 30 mins at 325 degrees
Vinaigrette - mix all vinaigrette items and pour over flans when ready to serve.
