     pea and mint soup

Ingredients
1/2 and onion chopped
knob butter
250g shelled fresh peas
handful radishes chopped
500ml vegetable stock
small handful mint leaves
goats cheese to serve
 

Instructions
fry the onion gently in the butter for 5 minor until tender. add the peas and chopped radishes cover the pan and cook on a low heat for 5 min
stir in the stock and season with salt and freshly ground pepper add about 1/3 of theof the mint leaves and bring to boil reduce the heat and simmer for 2 mins
remove the heat and stir in half the remaning mint . liquidise until smooth then season
reheat the through gentley if necessary then serve spinkle on cheese
