     Cranberry Orange Nut Loaf

Ingredients
Beat 2 large eggs in bowl until ligh
Add-
1 ½ c. flour(brown rice,or a mixture of buckwheat, amaranth and oat bran flours)
2 ½ t. baking powder
1 c. unsweetened soy milk
¼ c. clarified butter
2 T. grated organic orange peel
¼ c. vegetable glycerine or (could try yacon)
dash nutmeg
 
½ c. nuts
1 ¼ c. unsweetened cranberries (dried or fresh)

Instructions
Beat well until blended. Pour into greased, floured bread pan. Bake 40-50 minutes until toothpick comes out clean. Cool before slicing.
