     Lancashire Cheese Fondue

Ingredients
1 Clove Garlic
3/4 pt (425ml) apple juice or cider
1 1/2 lb (680gm) Lancashire cheese
2 tbsp Cornflour
1/4 tsp paprika
1/4 tsp mustard powder (optional)
Fresh Parsley for garnish
 

Instructions
Rub the inside of a large heavy based pan with the garlic (and throw in the remainder)
Pour in almost all of the apple juice (save 2 tbsp) Crumble in the cheese, and put on a low heat to melt.
Blend the cornflour with the remaining apple juice and add the paprika and mustard powder. Pour this mixture in when the cheese has melted and then bring to the boil, stirring carefully.
Pour into a bowl (preferably a fondue bowl with a flame underneath), sprinkle with chopped parsley and serve with your choice of accompaniments- (Cox's orange pippin, cored and sliced; Conference pear, cored and sliced; Chipolata sausages; cooked tomatoes in wedges; crusty wholemeal bread in cubes; English cheese, cubed).
