1 pound brie cheese, rind removed, torn into irregular pieces
1 cup cleaned fresh basil leaves, patted dry, cut in strips
4- garlic gloves, peeled, minced
1 cup- olive oil
2-1/2 tsp salt
1/2 tsp freshly ground pepper
1-1/2 pounds linguine
freshly grated parmesan
Instructions
Combine tomatoes, brie, basil, garlic, 1 cup olive oil, 1/2 tsp salt
and pepper in bowl. Prepare 2- hours ahead. Cover and set aside
at room temperature.
When ready for dinner, cook pasta in boiling water with 1 tbsp oil
and 1 tbsp salt. Drain and toss immediately with tomato mixture,
mixing half pasta first, toss, and then add remaining pasta.
Serve at once and sprinkle with parm!
